Forwarding email - can I strip info out of source email?

Using Kmail in Ubuntu. Really like Kmail, however when I forward a message to others, I'm finding it impossible so far to strip out other peoples' names and email addresses in addition to such things as what programs they're using to check for viruses, etc and thereby send a "clean" email. So far I've not been able to forward a message, which has both text and images, whether by using cut and paste, copy and paste, using the forwarding feature, etc. I'm confused, I must confess.
