KDE hidden settings

Hi,

Where can I find information about things like how to edit the desktop menu? I mean the menu you get when right-clicking on the desktop.
Or the menu you get when you right-click on a file icon? Some programs add themselves to this menu, e.g. the actions sub-menu. If I want to add something myself, where should I look?

Also, where can I read more about the program menu and .desktop files work?
I've had a recurring problem with a menu item from a program called kaffeine appearing on the main menu (not the sub-menus like most programs). I've deleted it repeatedly, and it always popped up again. I even went to such lengths to remove it that I deleted all kaffeine.desktop files I could find. Anywhere in the system.. But it still didn't want to disappear permanently.
Now it seems to be gone however. But it appeared after the installation of Fedora Core 6, but now it disappeared when I removed it in menuedit.

However, it would be interesting to read more about things like these.

~/.kde/share/apps/konqueror/servicemenus (or the similar path in your KDE installation directory for examples)

On freedesktop.org you can see the following specifications:
